Anyone able to point me in the right direction?
Requirements are;
3 season Munro use
4 season Glen floor level use
Helmet compatibility not needed
Decent length
Definitely not ultralight, probably mid weight
Excellent hood/collar is essential
Easy to get gloves tucked in
I could, after a Dram or two, stretch to £300 but that's in no way essential. But she really does not like the rain so if it needs more to achieve good foul weather protection it is worth paying for.
Look on Sportspursuit.com for GoreTex jackets, loads of excellent makes / models for under £300.

Any jacket using GoreTex fabrics will have been approved by Gore, so you can't really go wrong - you can't buy a bad GoreTex jacket. It's just down to style / fit etc.
Not a woman so can't comment on fit, but what about Mountain Equipment Rupal or Makalu? I've had the mens version of both and would tick most of your requirements.
Wife bought an Alpkit Fortitude recently. Cut a bit longer for bum coverage, looks and feels decently made, keeps the rain out, trustworthy company in case of any issues.
various Mountain Equipment GoreTex jackets will work,
Arcteryx Alpha or Beta (<£300 on sale)
Paramo
Try before you buy is the key as the fit can vary within ranges per manufacturer.
