I’ve been tasked with sourcing the following for my MiL;
- Over-ear wireless headphones with noise cancelling
- A means of playing music, potentially podcasts with said headphones. She’s open to a smartphone!
- Reasonably simple method of downloading & refreshing music
I’m struggling to come up with anything other than the smartphone option for her. She wants to use it mainly at the gym and wants music with strong beats!

Smartphone sounds easiest, with a subscription to Spotify or similar. From experience with my mum, I would focus on a phone/headphone pairing that connects first time every time (my current phone can be funny with certain headphones) but I don't have much to offer beyond that.
For ease, an iPhone and whichever version of AirPods fits the bill (AirPods Max I suspect). It won't be cheap but they pair every time and save so much faff.
Add in a Spotify or MixCloud sub and she's sorted.
Not all OAP MiLs are the same.
Earbuds and Android phone are the choice of a close acquaintance of mine. Unless she is wearing her hearing aids, which also pair seamlessly with her phone or tablet.

I stopped using wireless headphones some time back. I got fed up with the battery dying on its ass and then having to plug in a cable to carry on using it anyway. Not all wireless headphones will even work with a cable if the battery dies, although the new Beats Studio Pro (?) will work with a 3.5mm Jack and a USB-C, which will allow Lossless play if used with a phone that can play lossless. Spotify doesn’t have lossless yet, Apple Music has for some time as standard.

If she uses bluetooth hearing aids then you can just pair a device to those. If not, then decide on a budget and buy to suit. I use Anker Soundcore Q30 and they're fine - long battery life, comfortable etc etc. I pair them with an iPhone with no issues, but obviously they'll work with android too

AirPod Max is over ear and has noise cancelling. Clearly not cheap mind you.
Cheap smartphone and Sony wh-1000xm4. They fold up, ideal for taking to the gym and great noise cancelling.
Spotify for music and podcasts. If there's a few in the family using Spotify might be better to get a Spotify family account.
If all she wants is music then you can get refurbished i-pods for pennies. The touch screen Gen 6 has the app store built in so you can download Spotify to it (or music player of your choice) and the Apple podcast app and is £100 on amazon. As for headphones The JBL 600 NC series is Bluetooth, has a 40 hour battery life and a rock solid connection.
But then for the same money you can buy a refurb SE2020, so choices, choices...
