We’re having problems with our WiFi. It seems patchy and drops connection, but it’s difficult to diagnose. Sonos have been helping as we thought it was a sonos problem, but they’ve checked our router settings and they’re ok. I occasionally get no internet connection on the iPad too.
If I do a Speedtest it comes back fine with fast 55/20meg speeds. Is there any program or test I can run on the desktop or laptop to see how consistent the WiFi connection is? Leave it running for hours if need be.

Get wifi analyzer on your phone/ipad. This will show what other networks are around and if they are conflicting with your channel use.
What do you mean 'it drops connection'?
Does the router lose its connection to the internet, or do the ipad, sonos etc lose their wifi connection to the router?
When it's gone wrong, log into the admin page on it and look at the status page.
Another thing is whether or not it has 5ghz enabled. I found that some devices such as my (not so) 'smart radio' needed to have the 5ghz running on a different SSID to the 2.4ghz, rather than sharing.

the problem came about as the Sonos would randomly stutter during radio play. We’ve tried various things with the guidance of Sonos such as unplugging the power line adapters. It didn’t do it whilst the Sonos was plugged directly in to an Ethernet cable, but this isn’t practical as the Sonos is in a different room to the router. The reports generated by the Sonos showed a drop in speed or connection. The iPad will show no internet connection whilst trying to log in to online gaming. The iPad will connect to either the 2.4 or 5ghz networks, the Sonos only 2.4 ghz. It’s a pen ASUS router that’s a few years old and I’m wondering if it’s dying...
Do you have Alexa as well?
inssider is good but no longer free. It's nice as you can see if any other channels are popping up nearby or if yours is dying. The last free version is this one I think. IIRC you can leave it running and it gives you a graph of signal strength for all the channels but I can't remember how slow you can set it. I use the paid version now

Just looked and it only shows you the time graph over a couple of minutes which really isn't what you are looking for
I would run PingPlotter ( https://www.pingplotter.com/products/free.html) on your routers LAN address and at the same time run another instance on an external address ie google.co.uk
You can then quickly tell if it is your Device <-> Router dropping or Router <> Google and therefore your connection to teh internets.
If you do run it. use two different folders as if you run two instances from the one folder it overwrites its own database.

When it drops out, does everything drop out at once? Is it localised (ie, will the iPad drop out when you're near the Sonos but is fine when you're near the router)?
