So, I've been exploring new opportunities and managed to land a new role. Offer letter and contract etc. have landed and I am in the process of accepting. It's been a while since I moved companies voluntarily so am not sure at what point I tender my resignation. Do I wait until I send the documentation and the new company acknowledge receipt or is the fact that I have the documents and am signing good enough for the green light?

Agreed with wait for the start date, as you might need a conversation about notice periods. Better to do it in one go rather than resign then go back asking to leave early (if required)
I wait until I’ve got a signed contract, and any due diligence such as security checks have been done by the new employer.
I wouldn’t wait for a start date, because that would depend on my current notice period, when I hand in notice, and whether I negotiate it down.
Are there any caveats or conditions in the offer letter? Have they signed the contract themselves (bizzarely I worked a place that sent blank contracts, got the candidate to sign then we did reference checks so could withdraw by not singing ourself). If one of the conditions is subject to satisfactory references or subject to security vetting (which usually requires confirmation of most recent employment) you may be in the same catch 22 as start dates, you need to hand in notice before you can finalise with the new employer. However, in the current climate in IT I’d have no concerns that if they mess you round you can pick something else up easily. My only concern would be if it was somewhere that needs govt type security vetting as it can be *really* slow. So you could be between jobs for a few months waiting for that.
