I can do most things on a bike ... and esp now that YouTube exists with tutorials.
But wheel building seems like it is a dark art ....
Are there any good wheel building courses in the South East? ( The nearer Brighton, the better !)

It's not. It's about a bit of knowledge that takes about 1 minute to acquire and lots of practice.
I suggest you get an old wheel, note where everything goes, dismantle it, and then rebuild it. You may need to acquire some spare spoke nipples in case you round off the originals.
Then do a few cycles of dismantle and rebuild.
I lube the nipples with whatever oil is lying around - usually olive oil from the kitchen.
In the course of an evening you'll get the hang off it. Once you've done that come back and we'll go into the truing tips.
You don't need any special tools except a good spoke tool. Get one that contacts 3 sides of the nipple for less chance of rounding.
Truing can be done on your bike. Just turn it upside down. A couple of zipties can be used as truing guides.
If you can get it right with an old wheel, it will be a breeze with new parts.
