does anyone know of any less touristy places by the sea? The Mrs is looking at it for next year. Just me & her, not biking, bit of walking, quietish but with bars & eaty places (moon on stick) self catering considered even though we usually do a package for a 1st visit.

I think optical would meet those requirements Essel. It's a small town on the water, there's a few bars & restaurants but it's not overly touristy. The place has a very sort of Austrian/Italian feel to it and would still be warm in September.

Trogir is a lovely little town, a big like being inside a game of Cathedral (if you've ever played the game).
Close to Split - fabulous city - but a long way from Plitvice, which was one of our must-see places in Croatia (and which was fantastic). Krka Falls were pretty good, too.
There's also quite a good walk up a gorge which isn't too far away, as I recall.
The only thing we found with Croatia was that there were still quite a few uncleared minefields around - did not encourage straying ff the beaten track. May have changed since 2007 though...
I'd imagine anywhere down the Adriatic Coast is going to be warm in September. They may even have finished the Magistrala past Sibenik by now, which would be nice! (And would cut some journey times down rather!)
We went in September and couple of years ago. Nowhere seemed overly busy like Costa del English.
We stayed in Tisno, near Murter and the Kornati Islands - fairly good swimming and snorkeling.
Also stayed in Zadar which has a very tourist area that is easy to miss and is an amazing city with the sea organ and sun salutation.
Last place we went was Plitvice, stayed in a small village near the park entrance.
They are more geared up for Italian and Austrian tourists, so my meagre Spanish and French wasn't much use but the wifes GCSE German was for where there wasn't much English spoken.
Would quite happily go back to all of those.
Just re-read the OP post, Zadar was very good eating, probably had my best ever pizza at Pizzeria Canzona.
I was there this september and they suffered an "English Summer" - it rained a lot, and was low 20s.
But I was there two years before again in september and it was 30 degrees and blue skies the whole time.
It is getting busier each year. Split is cool for a day trip, Trogir is ok, Zadar is cool and IMO underrated; I would have a look at there first as there is also an airport with cheapish ryanair flights from stansted, plus access to Kornati national park which is great.
If you decide on an island, then do some research - Supertar in Brac is more a family resort, whilst Hvar attracts the jetset.
Last year we went to the North, Rovinj, check out the hotel Lone. Incredible hotel a stroll from the heart of the old town. Even with a festival on one of the local islands it still want over busy. Weather can be variable, mid Sept it was never above 25 and we saw a day or so of rain.
Couple of years prior we went to a small island off Dubrovnik. No vehicles on thy island add is tiny which made it very relaxing. Hot days were over 25 and under 30, but again I think we saw some cloudier days too. It was later in the year though.
Overall I really like the country and the people, it had some fantastic coast/islands too. Both times we went with Thomson and no complaints about either trip.
