Inspiration please...
I am doing a big meal on Boxing Day for 12 people so I'm slow cooking a shoulder of pork in apple juice overnight and serving as warm pulled pork sandwiches with sage, onion and apple stuffing, apple sauce and a selection of spicy sauces. On the side I am going to serve crispy potato chunks, sweet potato and coleslaw. And that's where I get stuck - what else should I do? What vegetables, what other sides etc...
Please help my unthinking head!
How about ditching the potato chunks and making some colcannon patties/pancakes fried to a nice crisp on the outside?

Chips cooked in beef dripping.
Coleslaw, baked beans, Collard Greens (type thing), fries, Margaritas.
Strained vegetables?
Mixed salad leaves, peppery ones, buffalo mozzarella, and sun dried tomatoes.

Do not underestimate the power of pork. Forget about vegetables on the side, just serve more pork.

A couple of different salads.
White sauce
Wolf nibble chips.
chitterlings, gumbo and catfish
and chips
Put the barbie on. Get some cos lettuces, chop each in half. Drizzle with olive oil and sprinkle with salt and pepper. Pop in the barbie for 5 minutes (lid on). Lovely.
Maccaroni cheese.
Beer
Nice chunks of roasted sweet potato/squash sprinkled beforehand with plenty of lemon juice, garlic and paprika

Pulled pork is always good with black beans. Loads of cuban black bean recipes online.
My mum always does pulled pork with a tray of roast potatoes and apples. It has a bit of an 'alternative apple sauce' vibe to it. I think it's either a Jamie Oliver or Hugh FW recipe.

Serve it in savoury pancakes instead of bread
Cauliflower cheese is improbably amazing with pulled pork! Similar to how macaroni cheese works but the bitterness of the cauliflower adds an extra dimension against the sweetness of the bark on the pork. I highly recommend putting it in the bun, if your mouth is big enough. And some pickled things - gherkins or the like, to give some acidity to cut through all the meat and stodge. Can I have the leftovers?

Sweet flavoured meat, cooked in fruit juice served with sweet vegetables and sweet coleslaw. How about something tart to take the taste away?
Sounds like eating at the Cinnamon Club in Westminster - probably the sweetest and most cloying meal I've ever eaten. Sorry.

Johndoh, you'll be wanting something acidic to cut through the fattiness and something crunchy to give a bit of yin and yang to the texture. Whoever suggested coleslaw up there was on the right tracks. Try a nice crunchy red cabbage pickle. Fat chips may be a bit heavy (unless they're coming in from a ride, in which case, go for it!), so have a think about some thin cut crispy Amercan style fries (precook at around 150 degrees, remove when floating but no trace of browning, then keep them aside for as long as you like before final hot fry at 190 degrees). From a drinks point of view, if you're thinking of wine (and nowt wrong with an ice cold beer), Gewurztstraminer (a white wine) would match it nicely (goes well with Chinese too) trust me. Bottom line though is that it's going to be so damn tasty anyway that I'm sure your guests will love it whatever you do. You've got lucky friends.
