It's interesting that on one hand the OP has the huge worry about his son appearing in court and the potential harassment that may ensue if he gives evidence against someone, whilst on the other hand he has a packet of mince he doesn't know what to do with.

Sweet & hot smoked paprika, garlic, red wine. Let it marinate overnight then use for meatballs. Tastes like chorizo.

fry/wok and mix with fried onions and gravy, ladle onto hot chips then liberally sprinkle grated cheese on top. Add a bit of sweet chilli sauce also, if one is so inclined.

Similar to howsyourdad1...
Fry it with ginger, garlic and chopped chilli, drain off extra water/fat couple of tbsp. of sugar and a good glug of soy sauce keep frying until dk brown and sticky-ish. Finish with chopped spring onion eat using lettuce leaves......mainly to offset the sugar!!

wrap the bags wound some bangers (fireworks not sausages), secured with elastic bands

Back on track, as my other diversion today has been postponed until 24th july,

...its non-rice chilli-con-carne topped jacket tatties..

Above mentioned recepies will be tried in due course. I have a tennis ball somewhere under the stairs unless a fresh one is required.

Stuff lampreys with the mince, wrap in tripe and slide into ox colon marinated in pancreatic enzymes, season with tearducts and serve on a bed of ankles. Delish.
