I've been told to order some bulk bags of plant mix for a path base and also to use in some concreting but no idea what it is, anyone know so I can try and get some quotes. Can't get hold of the builder to ask him!

He said plant mix not MOT stuff (I've found the MOT gravel stuff)

It appears to be a mix of sand and gravel:

Never heard the term but same as ballast according to this: https://www.broadoaklandscapingsupplies.co.uk/mixed-aggregate-ballast-577-p.asp

Ballast is widely available and used in concreting so sounds about right. Mot would be fine for the path but ballast makes sense if you are only buying one material in bulk.

common term here, as above same as ballast so is used for making concrete

As above, same as ballast. Premixed sand and gravel.
Local terminology. Grit sand / river sand / sharp sand / course sand All the same.
Usually builder orders the materials and you pay directly. That way they get the tight gear and remain under vat threshold.
