One for the employment lawyers, If you apply for voluntary redundancy can you withdraw that request or are you fully committed once you've made a declaration?

How far down the line are you?

If the company haven't formally accepted you in writing, I'd write to them ASAP asking for you request and consideration for redundancy to be withdrawn

My understanding (having gone through it) is that once you have signed the compromise agreement document under legal witness there's no going back.
If you haven't done that, then you can still pull out

Yep, an 'expression of interest' i.e. asking for the numbers is not the same as signing up. If all you've done is expressed a wish for the numbers/to be considered then you'll be able to pull out.

They might question your motivation though if you chop and change so you might have already damaged your standing with 'them'.

wot he said it is almost always an expression of interest rather than legally binding bu they will question why and at interview whatever your commitment might not score highly.
If they have tiold you how much it is and tha they have accepted they usually ask you to confirm acceptnace in writing. If you have done this again you can probably can get out of it but it will probably cause issues.
