I'll start-
Chickpeas in a quick & dirty marie rose (mayo + tommy k) sauce on a bit of lettuce is nice. Break the chickpeas up slightly so they can't spoing out of the bread too easily though.
I'm thinking that chickpeas could also be used in a faux tuna savoury sort of filling with mayo & salad cream with a bit of onion mixed through it?
Cheese - several thousand varieties to choose from
Chutney - serveral thousand varieties to choose from
Meat - about 10 varieties to choose from, but give it 5 minutes and someone will be allong to suggest bacon and that they couldn't go veggie as it's too limiting in choice.
I think I invented the nacho toastie the other day, tomatoes, chili's, onion, lime + nacho cheese in a toastie 🤤

Is it weird? probably. Is it nice? You bet
We eat a mostly plant-based diet and I’ve also given up bread (to lose weight and ease an intolerance) so would more likely tuck into a veg samosa or just have a big nutty or/or veggie salad with some chunky grains, bulgur, giant couscous, etc.
I do like sandwiches though, and vegan sarnies were always challenging so here are a few that really worked for me:
SLT: Sausage. Lettuce. Tomato.
Ingredients: Heck meat -free chipolatas (cheap, good taste, low fat) or Beyond Brat Sausage (expensive, better, more fatty), sliced room-temp tomatoes, crispy lettuce, Hellmans vegan mayo. Seasoned to taste with salt, black pepper and a little dried sage (optional). Slice the fried sossies in half lengthways, spread both sides of bread with mayo, top the sossies with lettuce and toms and seasoning.
Vegan cheese salad sarnie
Ingredients: either Violife Greek White Block (tastes like a blue creamy cheese mixed with feta cheese) or Applewood vegan smoky cheese. Add salad leaves, finely chopped red onion, cucumber, sliced tomatoes, any dressing you want. Chutneys are excellent here. Serve with a cool still traditional med/sweet cider
Linda Mac 1/4 Veggie Burger (plain, not mozzarella)
These frozen burgers are vegan, inexpensive, and a really good texture and taste. I spread some BBQ sauce, salt, pepper and garlic powder on the burger before cooking for 15 mins in oven. Top with (fried) onions and mushrooms OR sliced dill pickles, lettuce, fresh onion, ketchup and mustard then whack between pan-toasted brioche bun, burger bun, or slices of fave bread. Mouthwatering.
Jam.
I think that's it if we're not having meat or cheese.
Hummus, beetroot and paprika. Tasty. Makes your breath smell.
Also peanut butter and/or banana sandwiches.
Interesting chickpea ‘tuna mayonnaise’ recipe I’ve yet to try. I really like tuna and sweetcorn and pickled sliced jalapeños so will give this a go:

Or on toast or crackers, olive spreads, mushroom pate, butternut squash pate.
Or just for convenient hand held food, pasties and bhajis, pakoras, samosas.
It occurred to me since marrying someone from the US that the British sandwich more often featured/features the bread as the main feature and the fillings are conservative in choice, variety and volume.
Whereas the USA sandwich is like an overfunded and overstaffed construction project with time to spare.
On reflection I have much preferred the latter approach (focus on filling) in all ways. It’s also since made it easier to ditch the bread and eat more interesting, filling salads. I’ll still have the occasional sandwich yet normally defer to Mrs P for the design and build.
Excuse rushed sketch but this is about the size of things:

British: Tight, conservative, constrained, traditional.
US and A: Overflowing, generous, diverse, messy.
First time I ever visited a Subway in the US it blew my mind how massively-filled the roll was compared to the ‘bread with sprinklings’ I’d been getting/seeing in the UK Subway

NICE. Cold roast dinner with cranberry is top notch. Try ‘Squeaky Bean’ brand duck rolls vegan meat with it.

Spread hummus like thick butter, rocket, grated carrot, warm falafel out of the oven, mango chutney the runnier the better (as seen top right, this one calls itself 'spicy mango sauce'). Oh, and wraps, ofc. Tuck its bottom in (!) then fold the sides like a fajita. Nom.

Falafel marinara like a meatball marinara sub. Spicy tomato sauce. You can have your 'bread' of choice - pitta, wraps, subs, toasted etc.
These are all smashing thus far, thanks 😎 It's a tricky one, trying to think of a dairy-free sarnie filling, except it isn't really cos there's loads of tasty stuff out there!

not that I've tried it but I'd image something along the lines of Tuna Nicoise with chickpeas in the place of tuna would work well. Oven??? Those suckers should be fried, and greasy. The traditional Egyptian filling would be falafel, salad, tahini in a pitta bread. (Probably with a side serving of E. Coli on the "washed" salad, but that's optional).
Humus and avocado makes a decent vege sandwich filling, I have it for breakfast fairly frequently.
OP, make a vegan cottage pie for a main meal, and then use leftovers in a toasted sandwich:

We've been able to give up milk (well, buying [i]actual[/i] milk, it's a bit tricker to avoid it in other stuff but we're trying) and a sarnie out on a bike ride is one of life's joys. Being able to go dairy-free on the butty stop is A Step In The Right Direction as far as I'm concerned 😊

Coronation chickpea is a regular for us - best made a day in advance for the flavour to settle (inspired by Co-op). If we're out or travelling and feeling flush, M&S do a vegan salt beef pretzel bun, which is excellent - their other vegan sandwiches are also fairly good. Also BLT using fake bacon of choice.
