We have constructed some raised beds (currently 4 but plan on 7-8 more)

Ideally situated in the front garden, approx 50cm deep.

Soil and manure combined.

What vegetables can we start off this month?

That's a ot of beds....... I'd start with 2 at first. I've found Huw Richards 'Veg in one bed' a great start with my two new beds. Garlic is the only non transplanted sowing left now.

If you're having 7 or 8 beds definitely recommend one of strawberries. They're perennial but like to moved along every few years but mainly plant once get strawberries for several years.
Onion sets plant now or October. Get them from wilko or a local allotment place. Dead easy to grow. Plant now harvest July. Plant more in spring to harvest in August. Bought mine in Wilko this afternoon.
Likewise garlic. I normally plant mine in October. Harvest late July or early August. If you dry the bulbs they last all year.
Other overwintering veg as per that RHS list. Red Russian Kale is my usual overwintering green that then gives you greens in March and April.
For winter salad leaves sow pea shoots and grow them in a cold frame or closh. I normally do them in the greenhouse but clod frame will work well.

Edit: broad beans if you like broad beans. I normally give them a miss. Others love them.

Getting a bit late now, especially if you're further north. Could see if there's any plug plants going at the garden centres as they will stand a better chance. Things like spinach, spring cabbage, turnips.

You can also plant garlic bulbs for harvest next summer. They will go well in a raised bed.

And I would sow broad beans in October for spring harvest. Could also try some hardy/robust peas.

Yes fruit bushes. Raspberry canes can be planted (probably in November).
