So trucking around Europe - is it feasible to get say 2 road bikes , 2 Mtb’s , a motorbike, camping stuff, and maybe a couple of paddle boards in the back of a transit van or similar??!? (Oh and her indoors’ make up and jewellery…..)

A motorbike may push the space a bit. I'm getting a van based vehicle for exactly the same next year.

We can fit 4 MTB's under our bed in our LWB Sprinter.

Is there some kind of rack that the motorbike could sit on at the back?

A Dave Cooper rack would work nicely if it’s an enduro bike (MX Enduro).

If you’re coming from the U.K. I’d check what the situation is on carrying a motorbike into France on a van  as you may need a carnet for it.

Your at the mercy of  customs and each European country  has slightly different views on it.
(I suppose nothing stops you riding it into France and putting it in your van later )
