I've kept my iphone 6s on the original iOS as in the past they have throttled back the speed.
I now can't update certain apps so want to try updating it.
If I back up the phone on my computer, can I put on the old iOS if I don't like the new one.

I have a 6S. It has got better/faster with each upgrade.
There’s a software option to prevent the speed throttling due to battery condition, if that’s what you’re talking about?

Just upgrade, don't think iOS 9 (?) is still getting security patches so you're putting your own and other's data at risk.
Updating doesn't slow down the IOS. I've an iPhone 6 work phone, not even an S and always kept it upto date and it runs just fine. Just wish the bloody thing would die actually as I fancy an upgrade.
Just update your phone why would you leave it in such an old iOS?
6s runs fine on the latest iOS, no reason not to upgrade....

theres always chatter about speed and battery life after every iOS update but whats actually happening is that for a few days theres a lot of work being done in the background after the install so your phone is working like the clappers even though you're not really doing anything with it- lots of indexing and other boring stuff. It goes on for just long enough for people to write lots of whingy posts on the internet and convinces people like you not to keep your phone up to date.
Once thats indexing is done everything runs absolutely fine. Apple's policy now is to keep older devices viable for as long as they can so part of the rationale for each update is iOS works well for older phones. You might find some fancier features are absent compared to newer phones on the same OS but they are absent precisely for the purpose of not slowing your phone down.
