Some days I'll have maybe only a couple of coffees in the morning, regularly drink water throughout the day, no sugary drinks. Big drink in the morning, good drink before bed and 1.5l min throughout the rest of the day, more if I go to the gym. Not excessively urinating. Not drinking alcohol at the moment.
Yet come 5pm, I feel dehydrated 🤷
Any ideas?

Not severe dehydration, but dry lips, slightly dry feeling mouth and I always know when I'm a bit dehydrated as my left nostril becomes constricted and my left eye gets dry and stingy. For some strange reason
Your symptoms sound a bit like being in an overly dry environment, such as in an air conditioned room/vehicle.
You can quickly check for dehydration at home. Pinch the skin over the back of the hand, on the abdomen, or over the front of the chest under the collarbone. This will show skin turgor. Mild dehydration will cause the skin to be slightly slow in its return to normal
Feeling dehydrated is a possible sign of Type 2 Diabetes, worth having it checked by your GP.

The colour of your pee is probably the easiest indicator of your hydration level.
I am sure you know that it should be very pale lemon in colour rather than deep orange.
Keep a check on that.
Yeah, I was going with the dry environment. Either that, Covid or Cat Aids.
