I've put a complaint in an email to the garage where my car is currently stuck. I asked that all correspondence was done through email until a resolution is reached so that I had a record of everything. A few minutes later I had a missed call, followed by a text asking me to call them. I replied asking them to email me anything they needed to say, again saying that I wanted to keep a record of anything said now that it had gotten to written complaint stage. Next thing I know I get an email saying "please call us, it's too much info to put in an email".
Now I don't know about you lot, but if there is a lot of info to take in then I'd rather have it in email than over the phone so I can read it more than once and make sure I understand it fully, especially as I'm in no way technically knowledgeable about cars. So I've explained this in a reply to their email.
Am I being cynical thinking that one good reason for them wanting to talk on the phone is so there is no written record? It makes it much easier to deny, or at least cast doubt, if there is no record should things need to go further.
Get an app to record the call. You'll have to let them know you're recording it.

Sounds like they can't be bothered to take the time to write it all down as it can be quicker and easier to verbally tell you the info, however you have two options, as said above either get an app that will record the call, then you can either make a transcript of the call or keep the recording for records.
Or insist on an email, if it were me i would record the call, making sure i recorded it and then made a transcript.
I'm not going to hammer frozen sausages into their dog. Besides, on it's hind legs it's bigger than me and I'm not a short arse.

Or you make notes of the call, then summarise in an e-mail and send it to them. Sign it off with something like,
Please confirm by reply my understanding of our conversation is correct.
If they don't respond to that, then whatever you said is the official record for your complaint.

Call me old fashioned, but registered mail is how you keep stuff on the record. Lodge your complaint by registered mail and insist on a written response.
If you have access to it, do the phone call on Microsoft Teams. You can record the whole thing then.

I'm old fashioned too, and recently discovered that registered mail no longer exists. Royal Mail Special Delivery is the nearest equivalent, but there are differences.

It is one possible reason, but it's also entirely possible that they'd like to have a discussion with you to try and resolve the situation quickly, or that they aren't particularly eloquent at communicating in writing and are concerned that their words will be twisted/used against them.

I don't think as an individual you do have to tell them. You can't publically share recorded call but I think you can record a call so (1) you can take your time to listen back to it (equivalent benefit to it being in an email); (2) it is probably admissible in court for a civil case. It may be beneficial to tell them they are being recorded - but that would depend what reaction you are trying to get.
Sounds to me like they want to have a conversation with you to try to resolve the issue, think of how mediation would work via email (it wouldn’t).

As has been said before I’d suggest you speak to them and them email them the pertinent points and ask them to confirm their agreement. You can’t compell them to email you, or write to you.
I can really see why a conversation might work better for them. Not as a trick but to save them time and get your reaction. Just do a summary in writng afterwards.

Just call them and if there are any points of interest/conflict ask if they can confirm them via email.
Don't accept anything during the call and follow it up with an email into them yourself if nothing comes through.
