Chicken breasts stuffed with sun dried tomatoes & feta cheese, sauteed new potatoes, and.....

Still looking for some "health" to accompany the rest of my meal tonight. Any ideas?

+1 for spinach (or kale) and garlic

Tonight for me is kale and tomato pasta sauce with garlic and chilli over spelt pasta with stilton

Roll on dinner time

roast veg (tomatoes, courgettes, red onions etc) or spinach gets my vote. Kale might be a little "strong" for the other flavours

Liking the sound of the roast veg. Although if I go with that option I may boil the potatoes. Don't want to much oil on the plate?!

If going for the veg option, just roast the new potatoes in with them.

New spuds, cherry tomtatoes, red onion and peppers work well tossed in oil, salt, pepper and a touch of Balsamic.

it has to be some asparagus with a little butternut squash

i would perosnally swap the feta for some goats cheese.

cover the chicken breast in maple syrup first & marinate for a couple of hours.

Good shout big bud, id already thought of swapping out for goats cheese.

And at the moment its a straight fight between roasted veg and new potatoes, or roasted potatoes and asparagus. Life is great when this will be the hardest decision I make all day.

Roast veg is good, but I like jamie oliver's notion of adding some form of acid, eg orange juice to carrots, balsamic to beetroot, white wine vinegar to parsnips
Also, I sometimes roast them on a sheet of puff pastry for a flan type thing
Roast beetroot is excellent, but best to boil it for half an hour or so as it takes forever to roast

+1 asparagus, but get british, its in season. And enjoy the smelly pee tomorrow.
