I've tiled my kitchen walls down to where they meet the Worktops, they're white tiles and the Worktops are black granite.

I'm going to use black grout but what's the correct way to finish the joint between the worktop and the tiles, grout, sealant, or grout then sealant?

Black (or colour matched) silicone.
Needs the flexibility, grout will crack at the tile-worktop interface. Same reason to use colour matched silicone in the corners - not grout.

Really? Are the walls going to move?

Depends on the foundations and soil. If you are on clay or it's an old house with minimal foundations then yes, they will. Not much, but enough to open up small cracks

You might get away with grout in corners of a kitchen to be fair. It will crack but only micro crack and aesthetically be barely if at all noticeable. But in a bathroom the micro cracking in a grouted corner will be enough for moisture/water to get in and develop the crack further until it’s a right mess.
