Heading up there in October for the my significant others birthday & besides the Roman baths, what else is there to see & do?
roof top baths were fun.

The hotel was more fun
Skyline walk.
Ole for tapas.
Salamander for ales.
Thermae Bath Spa for dusky rooftop swimming.
Loads of stuff - the Royal Crescent (and the other Crescents) - No1 RC is worth a look.
Holburne Museum, Victoria Art Gallery, catch a match at the Rec, Thermae Spa.
I find new stuff every day just wandering around.
If you're after a good meal there's loads of good places to eat from fancy fine dining to dirty burgers, there's two cinemas and the Theatre Royal Bath..

Rent a bike and ride to Bristol Docks and see the SS Great Britain and ride over the suspension bridge 🙂

Assuming from your OP you're already going to the Roman Baths, so afterwards you might like to wander up to the Crescent via the Circus to take in the Georgian splendour (and beggars).
You could do afternoon tea at the RC hotel - there are nice cafes just before the RC in Margaret's Buildings. Assuming you're staying in a hotel, then I would wander back via the shops etc and then have a drink/pint in one of the pubs (good ones include the Raven, Hall and Woodhouse, the Griffin, the Boater, Framptons, Coer de Leon, Green man etc etc.
You could go for a pre-meal soak at the Spa (there are big queues at the weekend though) and then out for a meal, then drinks at the Canary Gin bar are always fun.
Sunday morning brunch is pretty popular - the big Boston Tea Party seems to be the place for that, and then you could perhaps hit the museums. Decent sunday lunch at the Marlborough Tavern and job's a good 'un.
From my experience of a wet week in Bath on cricket tour in the early 90's.
1/ go in random pubs and get pissed, because there's no way we're playing today.
2/ repeat for 3 more days until liver can't take any more
3/ randomly walk the streets trying to avoid being seen and dragged into a pub
4/ accidentally happen across a bike shop with new fangled (early 90's style) off road bikes in the window
5/ there and then, commit to buying one as soon as you get home from tour
6/ waste the rest of your life and a large chunk of your money having been bitten by the bug
7/ Spend any remaining spare time arguing with strangers on a vaguely related website
So - save your time and money, don't go, just stay here and go straight to 7?

You could easily and happily kill a day just wandering around the city centre - it's such an absolutely beautiful place.

I enjoyed the free walking tour, a trip up the bell tower and the holburne museum. Also the ferry/water taxi up the river to bathampton was a nice way to see a slightly different side of the city (and fit well with my hotel)
If you're into gin, then the Canary Gin Bar is worth a visit. Quite dark and moody inside, a bit like a prohibition era bar.

Hire bikes, two tunnels ride followed by pub lunch? Nice and easy ride along canal on way back too when you’ve had too many ales?
White hart at the bottom of widcombe hill or there is another good pub on the old London road who’s name escapes me, not been to it but comes highly recommend.
