Vietnam is one of my favourite places in the world, but I think you're wasting the flight there if all you want is a desert island hotel with snorkelling.
If it has to be Vietnam though, Phu Coc island probably ticks all the boxes.
Vietnam is such a well travelled country you should be able to suss out your trip yourself pretty easily rather than pay someone to do something you can do yourself. As soon as you get out of the big cities to the coastal areas I would think there would be more touristy beach-side hotels than you can throw a stick at. If you travel on business and stick with the same hotel chain then you have probably built up a nice stack of points with one of the big hotel chains and I'd bet they have resort style hotels at the usual touristy spots in Vietnam.
We have a ton of Virgin air miles and fancy a change to the carribean.
Mrs Zip will want a bit of culture but mainly it's going to be lounging, swimming and eating.
High rise hotels are just not relaxing and they mean crammed beaches.

cambodia batters it all over
we went 21 years ago. Flew into hanoi, and didn't see a westerner for days (until we bumped into the british ambassador's wife). Followed everywhere as I'm slightly taller than the average local.
The road to Halong bay was still dirt. Going south on Route 1, the minibus hit a pedestrian quite hard. We didn't stop at all. Had a lovely time in Hoi an, ate cat, got clothes made, had to buy about 15 pineapples on the beach just to get the child hawkers away from us. In Nha Trang, some one unlocked our hotel door at 3am, and came in. Bit of a shock. Stayed in the crazy house in dalat. Remember being in awe of someone going on to Cambodia, as it still wasn't recommended at the time. Eating Chicken feet in Hue, and being amazed at the destructoin there. And of course Mamma Hanh's boat trip from Nha Trang; a boat trip out to the south china sea, with all the beer/food/dope you needed. But on the condition you had to be serious coming back into harbour, or the police would get you.
Spent a month there - which at the time was the limit on the visa. Don't know now. And of course no contact with the outside world at the time.
But it was the most amazing country., Absolutely loved it. Much nicer than Thailand. Would go back in an instant, but I'm sure it's all changed now, and it's a bit Saga/Titan esque.
Agree with first reply.... amazing place but not one to go for desert island. The bustle of the main towns / cities is one of the charms.
I've never been to such a busy place (with the exception of a hotel that had only our group and another couple... but that was well into the northern mountains and a days drive from Sapa which is also pretty busy!).
