Now, if it was Tamarind, something like a nice Pad Thai would work.

You can use that for cooking Indonesia style fish ... if you have the full ingredients.
Or you can simply use easily available local British spice ... sugar, lard and more sugar ... 😆

Iirc it is a souring agent used in far eastern dishes (ie Thai). You'd really need coconut milk, sugar, fish sauce, garlic, red chilies to make anything approaching an eatable dish.
