Is it possible to set Strava so that no one can see any rides I've done and also if I'm out with a group I don't appear on the list of people on the ride.

Set the ride to 'private', means you don't appear on any segments though (if that's important)
You could set them to private.
Or just not use strava.

Mark your profile to require people to request to follow and only authorised followers can see your rides even if public, though with a catch in that if the ride is public non followers can see your segment position, click on the time and then see the ride. Private rides can't be seen even by followers however.
Want to hide an area, then mark privacy zones at locations (eg your house etc), and then public rides won't show the privacy zone part of the ride. Also to put off potential thieves, don't describe your expensive bikes in the 'gear' section. Just call it 'bike 1', 'bike 2' etc
Try using Runtastic Pro MountainBike instead, it doesn't matter what you set it to, NO ONE will ever see it.
i still think there is data leakage. You can see using flybys of a ride with someone who has a public profile even if you set rides to private. If you have done PR anyone can look at the segments and find your entry and then click on the time to show the ride. I'm not a strava stalker 😉 just inquisitive. I clearly need to change profession 🙂
You can turn Flybys off and if a ride is made Private, nobody can see it.
Ah just seen you can turn flybys off so nobody can see you. Stava have the same approach as faceache to privacy. Add a new function and assume you want to share it with everyone as default.

It's a social platform, if you want to keep all your data private probably best to use something else. You are skipping 90% of the feature list.
Do any of the other ride loggers allow you to track miles done on separate bikes and individual pieces of equipment tyres,chain etc...?
For me, that is one of the best features on Strava after pushing myself for the KOMs and making me fitter.

Can't remember what features are withheld from the free version.
Keeps track of equipment and parts, e.g. bike can be associated with chain and tyres.
It does need you to be using a logger capable of recording gpx/tcx/etc.
