I currently have a 600g tomahawk steak on order, this whole not being able to fly home due to corona virus has its upsides.

Re that Guardian article I would tend to agree with Dr Alexander - "My personal opinion is we should interpret these results not as the need to become vegan overnight, but rather to moderate our [meat] consumption".

So the occasional 600g steak should be OK, just don't do it every day!

Chicken stock (home made if poss, not too salty if a cube), red wine, chopped shallots, chopped mushrooms (dried ceps if poss) splash of Creme de Cassis (optional) all boiled down together till syrupy makes a great sauce. Add a bit of butter or pan juice to add "polish" at the end.

Or, put your pepper grinder to the coarsest setting and cover the steak in crushed peppercorns. Fry in butter and oil, deglaze the pan with white wine, brandy, whisky (whatever you've got) dollop in some double cream and maybe a bit of redcurrant jelly (or strawberry jam etc.)

In all cases, rest the steak for as long as you can aftrer frying.

    Personally I like my steak with just its natural juices and chips - a case of less is more.

    And in that vein, the most important criterion is that the steak must be capable of being resuscitated when it comes out of the pan - seared on the outside, still beating red on the inside.

    But on the rare occasions I am tempted by a sauce, that peppercorn sauce is the one.

Got a 1/4 of a dexter in the freezer. A customer keeps them on his land, grass fed, low intensity and high welfare. Very tasty. Sous vide then very hot pan for a couple of seconds on each side. Last night was a couple of bits of rump and a sirloin between the four of us with new pots and veg. Nom, nom.

No chance here - I love one, but the wife doesn't like the idea of chewing on a lump of meat no matter how how you dress it up.

In fact we're almost veggie these days. Very different to when we first met - she was mad for my chicken in west country ale sauce back then.

Had what looked like a nice bit of rump, forgot to turn the pan heat down so over cooked it (I like it just past still mooing) and it was all unchewable gristle anyway, most disappointing! Oh well, chips and peas were alright!

Lucky boy! I prefer mine pink as well, but if it does go a bit beyond I'll still enjoy it. A liberal dollop of butter can rescue it if it's really too tough, so I've heard.
