Apart from when they shot Leia in Return of the Jedi. Plot armour is not infallible.
In A New Hope, The only time any Stormtroopers directly shot at any main characters was aboard the Death Star where they were instructed to miss to facilitate the escape of the Millennium Falcon to track it to the hidden Rebel base on Yavin. The actual dialogue explains this. “Not this ship, sister!”

55 crew members were killed in the series. In 15 of these fatalities, the shirt color is unknown. Of the remaining 40, a total of 24 (60%) were wearing red shirts, compared to 9 in gold shirts, and 7 in blue shirts. There's a guy who has (so far) completed updated versions of ANH and ESB filling in some plot holes, gaps in the story and just straight up changing mistakes. Here's how he dealt with the troopers getting out of AT-AT's
I've watched his two versions and would say there is an improvement that kinda craps all over George Lucas's special edition "throw it at the wall and see what sticks" versions

The ATST I can forgive. A lightly armed/armoured peacekeeping patrol vehicle, especially in jungle or desert terrain, it kind of makes sense.

This is so geeky, but I love it.
The Stormtroopers aren't bad solders, from the Clone Troopers in the prequals until the New Order in the sequels, The Storm Troopers lose only a single battle, on Endor to the Ewoks when they were ambushed by a larger force with superior numbers, like someone else said, they were little fuzzy VC solders. Most of the time they're ambushed, take a beating, but the ambushers escape, the classic 'hit and run' guerrilla attack.
Their 'poor aim' only comes from the Leia rescue, but as Leia herself says, they were allowed to escape so they could be followed to learn the location of the Rebel Base, once they learned Leia couldn't be interrogated / tortured into giving them the information in time, she was no use to them as a prisoner and they could have killed her at any time if they wanted to.
As for the theory of it being the Sand People who attacked the Jawas and not Storm Troopers, to me it doesn't seem plausible. Their were Troopers in the area, they were looking for Droids and for a time had 'the droids they were looking for', soon after the Jawas were attacked, Luke's Aunt and Uncle were attacked because it was the next possible location of the droids.

With my 'Film Fan' head on, it makes them scary, at the same time they're inhuman so you can slaughter scores of them without causing the pre-teen intended audience too much phycological harm. I mean you've got to do something, it's a kids film about a intergalactic civil war with a body count in the millions if not billions and acts of genocide from both sides.
With my 'star wars fan' head on, I guess the same kind of arms race you see in real life goes on in Star Wars, in the last few decades Militaries and Police forces have pretty much stopped using 9mm cartridge weapons (pistols and sub machineguns) because body armour has become so prolific amongst Insurgents, Terrorists and Criminals they've had to either switch to more powerful weapons they'd usually only use on the Battlefield or even develop new weapons to combat body armour. It hasn't stopped 'baddies' wearing armour and better amour will likely be developed to combat the new weapons, but its mostly for looking good on screen, I mean it's useless, they can't see, it's the very worst colour for camo unless they're on Hoth etc.

Nah, Control had already gone to pieces and left by that point if memory serves. Furthermore, he's depicted as being very unsentimental, so I can't imagine he'd have been so unmanned by the traitor's identity.

The original clone army was. AFAIK as the need for troops increased Stormtroopers were 'recruited' from the various planets of the Empire - see Finn in Ep 7-9.

I think on the battlefield they rope down from the side, but I learnt that from watching a custom Lego AT-AT video, so I could be wrong.

I just finished this last week, so excellent timing!
It's a very good point, can't believe it didn't occur to me. Control had a pretty good idea who it was, and was still sharp enough at that point that he'd know Haydon turned up with information he couldn't have got legitimately. But the blowback was so severe that he didn't have chance to do anything with that information, and they were able to shove him out of the service without any credibility left.
I think the reason Stormtroopers have shitty aim is down to chafing. Can you imagine trying to shoot accurately whilst bits of hard plastic continuously rub up against your crotch, armpit or arse?
I love the Ewoks! There, I said it. They might be cute but they’re also clearly vicious little bastards. One of them is playing percussion throughout the Yub Nub song on Stormtrooper helmets. 15 galactic credits says the heads of the troopers are still in there.

Voyager-era medical was green. "Please state the nature of your medical emergency." I could've sworn there was a green female uniform on TNG too but I can't quite place it.
Black security uniforms is probably a bit too Section 31 / "are we the baddies?"

Vietnam, from an outsider's perspective, is a classic case of underdog defending home vs big outside aggressor. This has been played out countless times in history and is widespread as a romantic theme in literature and film. Of course Vietnam was prominent in people's minds at the time, but that in turn also raised awareness of other struggles such as that of the natives against American/European colonisers - and to be honest that's what the battle in RotJ reminds me of. American culture reveres the struggle for freedom against oppression (whilst at the same time doing plenty of oppressing) so it could be seen as being pro traditional American freedom values; pro traditional American anti-colonialism/anti-British/independence; subversive anti-Vietnam; or subversive anti-American domestic colonialism.
Or it's just a generic romantic triumph of underdog set-piece.
EDIT oh, apparently Lucas verified it is deliberately anti-Vietnam. As you were.

They were initially but over time they started diversifying, to reduce the risk of Stormtrooper Blight.

At the start of Rogue One, Jyn Erso's a kid & her Dad gets taken to work on the Death Star. It's just about finished by the time she's grown up. After it gets destroyed in A New Hope, doesn't take long to get a Mk2 underway.

1) If you're dropping troop carriers you want to do it somewhere safe away from anti air fire.
2) See previous point regarding shock and awe tactics. It's just badass as they know (think) nothing can take them out so just send them to plod in whilst the rebels brick it.
Uniforms, hierarchy, discipline, obedience, permanent warfare, good vs evil, social classes don't exist, behaviour and character are essentialist, genius not teamwork gets things done, foreigners are alien, destruction is thrilling, empires can be good or bad, people need to fight, opponents are robotic and identical in Mao suits, technology solves all, no-one ever needs the dunny. May well be wrong, never seen one.

I think, given that "A New Hope" is a mish-mash of a huge number of films TV, books, myths and so on, I think there's a bit of refitting the past going on there, especially as Lucas suggested it was Anti Vietnam for the first time only in 2005.

The Rebel Alliance needs to learn the same lesson that the U.S. Army was handed in 1950, that good troops cannot overcome poor planning and even worse resourcing.
