I've not eaten celeriac before but the supermarket had them going cheap. They are odd looking things, like a vegetable brain and I wasn't sure what to do with it. When in doubt, make soup.
So after roughly peeling and chopping, it got salt and peppered and gently roasted with some onion, before blending with water and a chicken stock cube. Then served with plentiful grated cheese blended in, big spots of pesto and some nice bread.
It looks and tastes very nice - the cheese and salty pesto seems to complement the mild celery flavour.

The soup-fetish is getting a bit out-of-hand, but it's such a simple and interesting way of increasing our vegetable intake. It's not doing the air-quality around here any good though!
i made soup yesterday for today's lunch.
bag of carrots
bunch of celery
2 garlic bulbs
2 large onions
sweated off in a touch of olive oil for 1 hr, 1 pint of veg stock blended in, bit of salt and pepper.
just eaten it for lunch, with a bread roll.
very nice indeed....... 8)
