Someone here posted a chilli brisket recipe not so long ago. I didn't copy it directly, but I did like the idea of using proper meat rather than mince and it was great. Score heavily, smother in whatever spices you have/like and cook with a heap of beans (if using raw kidney beans then pre-boil a bit) and tin of tomatoes etc. Then shred when cooked.

Derailing this thread with actual recipe suggestion:
Rub beef in paprika/smoked paprika/ground cumin/oregano/ketchup mix.
Stick it in the slow cooker with a tin of chopped tomatoes
Cook for 4 hours or more. Turn the meat over during cooking if you like. Depending on how big the joint is it should end up so you can pull the meat apart pretty easily.
Add a tin of drained borlotti beans or kidney beans about an hour before you want to eat it, cook for another hour.
Stir up the meat and sauce, add ketchup/brown sauce/salt/pepper/more paprika to taste. Serve with chopped avocado and lime juice.

chilli pulled beef. Wife has done it before, no recipe, went with what felt right. Didn't last long which is a good measure.

Add bacon too - all beef dishes are improved with bacon or chorizo. Chopped corriander stalks are must in the gravy too if you are making proper beef chilli.

Good tip about coriander stalks, i always make sure i use the chilli "trinity", fresh red chillies, smoked Ancho chillies and some hot chilli powder to taste.

The key is getting a few different chilies; I used ancho, pasilla, guajillo and chipotle.
My version:
2 ancho
2 pasilla
2 guajillo
2 chipotle
lardons
2 onions
6 cloves of garlic
half kilo of steak mince
half kilo of ox cheek
1 tbsp oregano
1 tbsp toasted and ground cumin
1 cup strong black coffee
1 tsp cocoa powder
1 tsp cayenne pepper
Water to top up.
Fresh coriander
1 can kidney beans
1 can mixed beans
Toast the chilies in a dry pan then transfer to a bowl, cover with boiling water and leave for half an hour.
In a casserole dish brown the beef in batches then fry lardons onions and garlic cloves. Mix the beef back in then blend the chilies in their water and add that to the mix.
Stir in oregano, cumin, cayenne pepper, black pepper, salt, cocoa and coffee. Add a bit more water to cover and cook for a good few hours.
Half an hour before its ready stir in the beans, then top with the coriander before serving.
I did this (i think it was this one anyway) a while back and everyone* loved it.
