I was going to do slow roast chilli beef joint this weekend for me and the boy however I cant find the recipe we usually use which provides me a great opportunity to experiment! Which is half the fun of making chilli IMHO.
So Oh Great Collective Wisdom, give me your banging slow cook (but not slow cooker), hob or oven chilli beef joint recipes please 🙂
I used to make Chile Con Colorado which is certainly banging. Â Only thing is it's in a Mexican cook book and I can't be typing it out. Â Have to source ancho (or serrano) dried peppers, toast them in a pan, soak in boiling water, make a stock from them to use with the sauce ingredients, finally straining through a mesh sieve. Â Quite time-consuming but the smooth, rich, deep, smokey hot sauce is amazing. Â Simple and unbeatable IMO as while it's a very rich sauce yet the taste of the beef is still a star and isn't complicated by toms and too many spices.
