I'm buying three domains so we have our own custom email addresses and it's asking me if I want to use custom nameservers. Do I?

Do you have any sort of web/email hosting?
If you just buy a domain name, it doesn't usually include any hosting. But it will let you set up email forwarding. ie anything sent to you@yourdomain gets forwards to another email address (eg Gmail). If you just want forwarding, then just leave the nameservers as the default.

If you want to setup your own web/email hosting, then you will need to set the nameservers to point to that.

I'm going to be buying hosting from TSO so that we can use these for our emails, and maybe a website in the future.

Who are you buying the domains from? If you are buying the domains from somewhere else, you will need to set them to the TSOhost nameservers. Seems it should be ns1.tsohost.co.uk, ns2.tsohost.co.uk, ns3.tsohost.co.uk

If you buy the domains and hosting together from TSOhost, it should all be setup correctly to start with. You should be able to manage the domains in your account settings or Cpanel.
