I've always enjoyed Asian style noodles/stir fries ( mainly chicken/prawn based ) but have not had much success getting a good flavour myself . Anyone offer advice/recipes that are easy but delicious? Btw ..not too keen on soup type dishes .

Simplicity is best - stir fry vegetables/meat then throw in noodles and a little honey, soy and a dash of fish sauce. Chop up some red chilies for a spicier flavour.
Thai-style ones with coconut milk and green curry paste also nice.
Hit up your local chinese supermarket and get some oyster sauce and veg sauce in as well. If you want proper asian stylee you can make noodle soups with mince pork or fish balls, which are yummy:
Pork mince (125g per person, marinaded over night in chilli powder, white pepper, maggi suace, spring onions and a dash of sugar)
OR Fish balls (with spring onions and chillis thrown in at he same time)
Make up a broth using chicken stock
Add fish balls/pork mince mix simmer until cooked
Add Pak Choi/Choi Sum/Chinese Lettuce
Add rice noodles
Serve

not thought about using noodles in a thai curry though because it's normally served with rice ...maybe I should give it a go!

Local asian supermarket will sell thai stuff like bai krapow paste and other such goodies.
Oyster sauce, fish sauce and soy sauce, chilli sauce (tabasco etc).
Experiment in varying combinations allong with lime, lemongrass, etc.
Meat + veg
Etc etc etc.
Singapore noodles are tasty + hot
Trriaki (sp?) is easy, one part soy sauce, one part chilli sauce.
Also palm sugar is used extensively - or just use brown sugar.
Mix up tamarind paste, chilli powder, brown sugar, lime juice, soy sauce, fish sauce. Chuck it over stir fried veg, marinated tofu and chicken/prawns and some pad thai style noodles.
fish sauce, white wine vinegar, dark soy, tomato puree, ginger, garlic, chopped chilli, sliced carrot, red pepper, brown sugar

don't know the quantities, just keep tasting til it tastes good.
Mirin, rice vinegar, soy, garlic, chilli, ginger, sugar, lime juice, shallots, red peppers, cashews, fish sauce (if you can get it)
Good with chicken and fish
