Need words of experience here, got a brace from a local shoot on saturday but being lazy I've allowed them to just hang outside since then - I know this is standard practice for many but it's been pretty mild recently so should I be concerned it's going to be dangerous?
Just been and breasted them and it's hard to tell if they're really off or not, it's not the nicest smelling thing to do when they're fresh. Surely if I cook them well enough no bacteria will survive, will it?
Don't really want to waste them if they're OK as I've bought all of the ingredients for the pot now 😕

We used to eat them when they had maggots growing out of them. Obviously they were cleaned thoroughly but you could call them "well hung"

I think as a rule of thumb store them in 10C max, dry cure in a larder, least that's what we use to do, for about 4-6 weeks.

They'll be fine. Really you should hang them somewhere where the flies cannot get at them and/or with covers (like a big net) but at this time of year you should be fine.

BTW, don't bother trying to pluck them, just chop the head off & pull the skin off turning it inside out - much faster, easier & less mess than plucking.

Half them and chuck them in a casserole with sausages and savoy cabbage, hmmm. Also means you don't have to worry about drying them out. We never hung them for more than a few days but they were hanging in a proper game larder, well ventilated with mesh to keep the flies out. Enjoy. Partridge is probably my favorite FWIW.
