We've not been abroad for over 12 years now so have only ever booked through high street travel agents (back in the olden days!)
Couple of questions..
• Where would you go for something intersting but not too expensive (Bruges has been mentioned by friends).
• Who would you book through?

Bruges, Ghent, Baie de Somme (Picardy, France), the Ardennes (Belguim)... All lovely for different reasons. Depends what you want to do when you're there.
Eurotunnel for the channel crossing, tripadvisor for the reviews, booking.com for the accommodation. Sorted.

FWIW, I like the following for the following;
The 'Dam, for meandering and pootling. Oh, and the Night Watch is simply stunning.
Paris. If you know where you're going, it's a stunning place to while away the days.
Barcelona. Love it. Some great food, a lovely beach (in parts) and a very easy going place to be.
Toulouse. Truly stunning place. Very much underrated.

We need more information about the type of holiday you are looking for OP...

Ardennes for walking
Baie de Somme for birdwatching, steam railway, WWI sites, Naourse underground city, Amiens and Les Hortillonnages...
Also depends on how long you plan to go for.

If you just want a cheap anonymous room then stay in a Travelodge.
I thought it was people just earning money by renting out spare rooms/flats not some sort of social experiment.

Split is fantastic, Trogir is lovely, Plitvice Lakes National Park is fantastic, Krka Falls ditto, nice people, good food.
Big country though (well long, anyway): be prepared to do a lot of driving to see even all of these.
Dubrovnik is on our list as well...
