any ideas of where to break the journey to make it significantly cheaper?

You're possibly booking a little too far in advance to get good advance ticket prices, a bit of homework maybe to see when the best ticket prices are released
Also, with the online booking sites you'll often get a much better price on any route that you can't travel directly (i.e. without changing trains) by buying each leg as a separate ticket.
On those dates the West Coast line to Glasgow is still expected to be out of action after a bridge was damaged in the floods at new year so a lot of passengers are having to travel via Edinburgh instead, which might mean there are fewer discounted tickets available on that leg/

We used to pop up fairly regularly from Sheff when we had mates there, and always took the car. Up the night before (set off as soon as you're done) and leave after lunch on the last day.
Pretty certain you can get Edinburgh - Ft William for £20 single and Ft William to Edinburgh for £20 single on the Scotrail website (getting a 'return' never seems worth it weirdly).
So that leaves £560 to get from Sheffield to Edinburgh and back, I typically get an open return to and from Leeds for about £100ish (work books it so I'm not too sure) on thetrainline.com.
How much from Sheffield to Leeds?

It sometimes throws up much cheaper tickets by splitting your journey, it works out the most efficient ticket breaks. Think it takes a cut of the savings made. I've never actually booked through it, so cannot say how successful it is!
But if you do get chance, try and break your journey at Corrour. There's a fantastic restaurant on the station, but maybe check it's opening times first. And then you can recreate the 'It's sh1te being Scottish' scene from Trainspotting! As not only is it the highest UK mainland station, it's where that scene was shot.

Bus (Citylink) from Edinburgh / Glasgow to Fort William is quicker and cheaper than the train. Though not as scenic.
Megabus used to do a coach from Meadowhell to Inverness. Easy enough to get to Fort William from there. It's a very long and grim coach trip though (9 hours ish...) and probably not ideal if only up for a few days.
On the plus side only cost me 9quid each way last time I used it 🙂

This guy needed to get from Sheffield to London and found it was cheaper to fly to Berlin and back compared to a direct train, it may be worth checking out flight prices: 😯
Sheffield to manchester to glasgow is pretty cheap. for two £39 quid £ 26.80 from queen street to fort bill. Might have to adjust travel times outside peak times. Don't buy through tickets.
Bet you can get the same on return.
Try driving half way and train from there. Preston is a useful interchange station, you can often get much cheaper tickets to/from there - either starting the journey there or buying a split ticket.
You'll have problems with the trains in Scotland, there's loads of small sections out of action due to various storms over winter. Half the network is shut down today due to the winds.
Flight from East midlands Airport to Glasgow (£88), Scottish citylink bus to Fort William (£28) both returns.
