[Closed] Scottish (Selkirk) Bakery Truffle Recipe

Hopefully the STW Hive will come to my rescue.

Whilst on holiday I munched a fair few cakes, one of which was a rum and raisin truffle. Purchased from a bakery in Selkirk. Said truffle was about the size of a golf ball, but not chocolate filled. Was a (best way to describe it) cake type truffle.

Now back down south of the border and wanted to make some, can't find a recipe or method ANYWEHERE. So can STW help?

Kent is a bit far for me. As a compromise I can get some at lunchtime and tell you if they are still good.

My wife makes these.

Sometimes she puts mini Creme Eggs inside and makes chocolate scotch eggs.

Yum.

Used to love those from the Heidi's bakery!

At my last place there was a local bakery where people used to go to buy the round of birthday cakes - the truffle cakes from there were the size of softballs.
Pretty grim eating unfortunately.

Old family secret apparently.

It involves a big packet of McVities Digestives, butter, cocoa powder and golden syrup. That's as much as I know.

Not really like a cake lollipop.

The first recipe posted above is very nice. Will test out as trail food in the coming days

My mate used to work in another local (to selkirk) bakery. Before he left he managed to 'acquire' the recipes, will get him to hunt it out the next time he is down this way

So my mate e-mailed the recipe down. Seems the gala version is a more coconut than raisin version of the 'kirk but here it is:

[b]Biscuit crumbs 3000g
Dessicated coconut 1245g
Condensed milk 3750g
Chocolate paste 90g
Cocoa 450g
add rum (i guess to your own taste)

Mix all the ingredients up and then roll into balls, then roll in coconut. Place on paper covered in coconut and refrigerate.[/b]

I imagine that you might need to reduce the actual amounts of ingredients stated, i never asked how many it made. Should be able to change coconut for raisins then roll in chocolate, hope this helps you OP
