Anyone care to share there favourite homemade dressing, i feel like a change from the normal one I make.

Balsamic and some mustard and a bit of black pepper.

Fits in with my diet. I'm sure someone else could do better though.

1 part olive oil, 1 balsamic vinegar, 1 part lemon juice, fresh chives.

Put the following into a small clicky tub (lock n lock tupperware thingies):

A conservative blob of whole grain mootard (drives a 4x4, lives near a good school and likes sailing), a dash of balsamic, a dash of extra virgin, some black pepper, pinch of crushed rock salt, a little mayo .

Shake it like a polaroid picture you want to ruin to emulsify the whole lot. Pour onto salald. Done.

It's quite nice to chop a clove of garlic finely and add to equal generous parts of cider vinegar and olive oil. Bootiful.

Not sure if this counts as dressing or not but i just drizzle good quality virgin olive oil and really good quality balsamic, sometimes with a sprinkle of dried basil.
If you get the really expensive balsamic (£12/bottle in Sainsbury) it's much thicker so you actually need a lot less, and the taste is way better

You guys are using WAY too much acid.

I'd go:
1 part acid (vinegar/lemon et c.)
3 or 4 parts oil.

Use different oils, extra virgin rape seed is nice, or walnut if the salad has any nuts in it.

Try adding flavourings, as above, mustard, but experiment with different ones. Or pesto, Tapenade (a bit salty), use your imagination.

Oh, and salt and pepper, it's the only seasoning the salad will get.

Remember not too put too much on, just enough to lightly coat the leaves, mix it in with your hands, spoons et c. will bruise the salad.

Egg yolk, lemon juice, mustard, garlic, salt, pepper.

Whisk and dribble in rapeseed oil (still whisking) until required thickness (anything from runny dressing to mayo thick depending on taste).

Rapeseed oil 4pts. Cider vinegar 1pt.
Chilli flakes
tom puree
seasoning
paprika

Good for cous cous / bulgur wheat salads
pt = part not pint
other quantities to taste

A mix of olive or rapeseed oil, honey and soy sauce with a bit of salt n pepper works well.

Edit - What is the normal one you make?

agreed -- 1 part acid to 3 parts oil.
splash of maple syrup.
salad herbs.
bit of mustard.

1 part decent olive oil, 3 parts white wine vinegar, small blob mustard, little bit fresh garlic. Salt and pepper, tiny bit cayenne.

My favourite just now is a concoction of - soy, nam pla, sesame oil, sliced fresh chilli, lime, mint and coriander, mixed with a bit of jaggery (palm sugar) and doused over grated carrot, sliced red pepper and cold fine egg noodles. Tis lush.
