I've a couple of sabatier kitchen knives (dont know which sabatier), the black handles with 3 smooth rivets.
The handles are in varying states of looseness and I'd like to get them repaired
Is there anywhere I can send them or take them (south east) for repair? I dont want a DIY riveting solution

I have the same problem with the same knife maker, a set of 5 yet only one was good and got used but lost a rivet and the others slack
I removed the handle off a really old carbon steel knife and the rivits arre simply brass pegs that go through holes in the tang and are then hammered flat.
You could try hammering them some more, or alternatively drill off one side, pop the entire thing out, then replace with the screw type.

Im intending on replacing the simple handle on my knife with some figured snakewood scales I cut from a piece. Bit easier for me as the scales are wood and i belt sand them to shape. Not so easy when the handles are already shaped and made of plastic.
Got a pic? It's possible that the material has shrunk/contracted over time meaning simple re-attachment may not be possible.
it may be best to replace them completely - it can be done with some time/patience but requires some basic tooling that you may or may not have access to, depending on exactly how the scales are formed & attached.
FWIW, I've done this a few times, but mainly from scratch. The finish of some factory tangs is awful, or not suited to anything other than mass production.
