we're up in Newcastle at the w/e.

Apparently you can not book a table.

How likely is it to be rammed Saturday lunch o nighttime to the extent that the wait is too long ?

The best fish & chips in Newcastle ..or anywhere else in the North East for that matter is Fenham Fish Bar ..its a takeaway but I promise you the Haddock & Chips are truly spectacular ...not a place where you can sit in but unless that's what you really want ..change your plans!
Fenham Fish Bar

21 Stamfordham Rd, Newcastle upon Tyne NE5 3JQ

Or Kristians on the fish quay in North Shields?

I think it might be called oceans now. Not been for about five years but best food I've ever tasted

It’ll be jammed and you’ll probably wait 30-40 minutes for your meal, but it will be delicious. Not fish and chips, though I suspect OP knows that.

My suggestion would be to continue driving north to St Andrews and visit the Tail End The extra miles would be well worth it.

Longsands Fishbar? Up that way you need to try Fish Kitchen and hope for a lobster burger.
Otherwise, try Riley's this evening
