Ok, first world problems I know, but i am a bit fed up of cheese/ham etc sandwiches for lunch.
I have access to a microwave in work, so what does the Singletrack massive do for dinner/lunch.
Inspire me!!!

Everyone will say soup. I had soup today. Left me so unsatisfied I had to demolish a bag of bombay mix to make me feel better. And it was nice soup. So I'll say sushi.

Leftovers into a thermos? If it's with rice etc make sure you mix it first so you're not digging around for the good stuff

I do a mixture of leftovers and chicken, microwave rice and some sort of greens.

Today was peri peri chicken thighs, golden veg rice and green beans.

Can be a bit boring but you can always change up the spices and flavours.

Ha ha, don't like bagels. They always taste a bit stale. The office Gym bunny lives on Rice & Tuna, so wouldn't want to upset them.
We don't do leftovers in our house. The 17 yr old dustbin sees to that.

Toasted pitta, sliced open (obvs), chilli jam, roast turkey (or other meat) slices (but quality slices), jalapeno's, grated cheese - bang in the microwave for 90's, open up, brown sauce & black pepper. Blummin delicious.

Stick some salami in with the turkey if you aren't bothered about your arteries

DIY pot noodle cooked in a Sistema microwavable noodle bowl.
made with
Instant noodles, but interesting/mystery flavoured ones from the Chinese supermarket
Cooked chicken or beef ether leftover from roast dinner or from the cooked meat section, or drop in an egg and let it poach in the noodle broth.
Diced veg eitherfresh of out of bag of frozen mix.

If we've had roast chicken, I'll make chicken stock from the bones and take that in a flask to use instead of water

I only take lunch to work one day a week, (I only work 2 anyway) & my fave is...a tin of pink salmon mixed with a tin of tuna, some chopped red onion, chilli flakes, black pepper & mayo. I suppose you could warm it up but I don't have a microwave in the minibus.

I bit of mustard really makes a ham sarnie. English or French depending on preference.

Also sliced beef and horseradish is a winning combo.

Take left overs (you can deliberately make too much just for next days lunch).

Grain/rice bags with some precooked meats, cheeses and olives. Lidl and Aldi have good ranges and are very reasonable.

Add frazzles to sandwich and you have a taste and texture sensation. Will clearly never REPLACE bacon as a filling, but in some ways is better than bacon.

Alternatively, find your local asian shop and try one of the 10,000 varieties of noodle pots. Be warned, if they say hot and spicy, they don't do understatement.

But a sandwich IS lunch!
Decent bread (white, brown, sourdough, baguette, whatever) but good bread is a must.
Next add decent chutney, not to vinegary and cheese or ham sandwich is transformed into the only lunch you ever need.
If branching out pease pudding in a ham sandwich is a very good thing.

Edit: if you want to pretend to be healthy have some salad on the side.

I quite like some hummus and yellow or orange bell peppers (raw) to dip in it. Quite nice. Or some Greek yoghurt with some added seeds etc and a tiny bit of honey.

I very rarely eat bread at lunch, if I do its granery-wholewheat.

Wrap with a little mayo, mustard egg and avo, or ham and salami and loads of chopped cucc, toms and lettuce.

Pitta breads with tuna and some melted cheese

beans and tuna or chorizo and veg, plus dressing

much better 🙂

I* have a few regular options that make for a good level of variety, but a bit of Sunday effort!

Option 1: Lentil as anything

Barley and lentils - a batch made to provide two days of lunch for four.
Brown Rice and lentils - ditto.

These are in the fridge for the week, the night or morning before work we add salad of choice and cheese/tuna/dressing.

Option 2: Las-agknee and pie
On busy weeks four lasagnes are prepared with two varieties - normally a Tuna and tomato, pumpkin and feta, lentil and something or other. Two are used as dinners and two for lunches.

On those weeks two large filo pastry pies are made - one with a nut and potato and vegetable -based filling and the other with cheese and veg. Same as above, some eaten for dinner some for lunch.

Extras
Banana based cakes or date-based energy balls (but made in a tray and cut into squares) are normally made on Sundays too.

*OK, OK, it's Mrs Reeksy who does all the prep work, who is pretty amazing and chooses to do this to save us from eating packet food.

Half the suggestions on here are sandwiches! Foreign muck ones but still sandwiches. Soup for the win. Had all the left over veg from the roast today, rare treat though. Jacket spud/sweet potato a possibility too.

Manchester's Smithfield used to/does organic spicy pickled eggs, I had to make my self stop at two. Sublime. I shall be monitoring that situation with glee in a few weeks.

I should point out I'm against the abolition of the sandwich.

Peanut butter, sweet chilli sauce and grated carrot is my new favourite from that thread.

Had loads of leftover rice from catering for 10 at the weekend (apparently not everyone eats as much as me), so I mixed in a couple of eggs, some garam masala and turmeric (mainly to make it looks less gray), chickpeas, peas, and cashew nuts. Tipped the whole lot into a non-stick frying pan with plenty of oil and squashed flat and even. Turned with the help of a plate after 10-15 minutes. Ended up with a couple of nice lunches - added a bit of tagine paste/mayo mix.

How to eat pickled eggs…

1. Take a packet of salt and vinegar crisps and thoroughly crush the contents into tiny crumbs

2. Open the crisp packet and drop your pickled egg in and give it a good shake

3. Remove pickled egg, now coated in a layer of salt and vinegar crisp dust and chomp away

I do a salad every day (unless the lettuce goes out if date then I take a sandwich).
Lettuce (pre bagged stuff from Tesco does two days of lunch)
Tomatoes
Olives
Cheese
Either tuna mayo or chicken cooked the night before.
Maybe avocado

I eat this every lunch time with a bag of crisps afterward. I really enjoy it.

Part of the reason for this is because I stay away from gluten as it makes me feel shit and gluten free bread is too expensive every day.
