Recently hired a car. Synced my phone to the infotainment system, and forgot to delete it when I handed it back
I'm assuming it'll have Synced my contact info from my phone, but anything else? Texts? Addresses? Nudie Pics of the gf ?

Stuff like CarPlay just render the phone content. Did it use CarPlay or was it old school?
Not so much the storing as the transmitting depending on the car.
I once forgot to unsync from a pool car at one of the hospitals I worked at.
Weeks later I was standing in a corridor overlooking the car park and the phonecall I was in the middle of kept cutting in and out. Then I noticed one of the pool cars coming out of the car park heading closer to me. At the time I thought it was a novel way of not listening to my wife.
But when I got home Elon had already been round and changed my kid's names to Viking and Arizona.

Old-school...standard bluetooth connection
Did you ask it to sync contacts or did you simply connect it using Bluetooth?
My car 2014 Skoda, will remember the phone but without the phone connected it won't show any contacts, even the one's I've said are my favourites for quick access. So I'd not be overly worried. Worst case it will show your phone name in the list of devices that have or can sync.
