We want to change the knackered old handles on our internal doors. Turns out the new handles are wider than the original and as such hang over the internal molding. The spindle in the old latches is not centreded and close to the internal edge. These are big old latches with locks as well, which are long redundant.
I am thinking I could remove the latches, buy new ones which will have the spindle in the centre.
In order to fit, I’d shape a bit of pine to the size of the old latch, glue it up and bang it in with some clamps, then hopefully I could fit the new latch. Hey presto, spindle in central position, and handle will fit without overlap.
We want to keep the old doors....
Does this sound dumb? Is there an easier way of doing this?

Nope! You are right, it's never easy & doors seem to be particularly problematic.
I recently had to 3-D print a stand-off plate for the new handle/lock of our downstairs loo as the clearance between the door & frame meant that the lock didn't work (just enough play in the mechanism to free the latch, even when in the locked position).
It sounds like a crap, ugly solution, but in reality it's barely noticeable & the colour almost perfectly matched the satin white gloss.
I can't quite visualise your problem/solution, but it sounds feasible. Any chance of some pics?
