Fluke for playing flacs in iTunes
Ascent for training/route logging
Parallels for running Windows
Transmission for torrents
In all honesty....none for me.
Some people say quiksilver is really good, but I never found it to do anything i desperately needed, just saw it as a slightly better finder.
erm Unrarx for unpacking rar files easily and for free.
Handbrake for dvds and stuff
in terms of widgets, a dictionary one, currency converter, and istat nano do nicely.
Spaces is a pretty good app that i should use more, as i normally have loads of apps open, and this is a really convenient way of organising screen space.
Time machine works very well as well.
both programs I mentioned are for mac's not iphones...
Transmission - for torrents
Aperture - for photos
iWork - for work type swag
Delicious Library - for keeping tabs on all my CDs DVDs etc and who has borrowed them
Dropbox - for accessing stuff from the laptop/desktop/work/iPhone (use this link to sign up and I get more space for free - thanks)
Evernote - for synchronising notes across computers/web/phone
Onyx - for keeping things tidy
If you have any specific needs then there are other apps I use for more specific purposes so feel free to ask....
