As far as hats go I think wool has been surpassed many times over.

For biking I have an Endura Thermolite - only really need it when it's really cold

For general use I love Turtlefur - first started wearing it skiing on the East Coast of the US where pretty much all my European ski gear wasn't warm enough. Snow and Rock stock them.

Don't think I've ever bought a winter/warm hat, but have several from the likes of Oakley, DaKine, Eider, Schoffel, Kjus, Salomon, Atomic, etc. All nice and toasty, but my Schoffel Cervinia hat is my current fave.
