i made a homemade pizza consisting of cheese, jalapenos, peppers, onion and roasted chicken on saturday...i couldnt be arsed to make a proper base so i used puff pastry and then had the idea to place a second sheet of filo on the top so it ended up looking like a pastie/pie....very yummy...does it count??
if not then cheese and onion it is tonight!!
only a Holland's will do!!

Bleurrrghhh.... Mediocre stuff <- a bit harsh really

Having said that, at least they're pretty consistent. When working in Barrow-in-Furness recently, I created a Pie-Chart where colleagues could post reports/reviews of their favourite pies from the many local independent purveyors of pie based loveliness. Hollands were used as the baseline.

Here's my reci'pie..

Leek & Potato

3 leeks , cut into chunks
small knob butter
pinch dried rosemary or thyme
450g potatoes (1 very large baking potato is perfect), chopped into thick slices
140g melting cheese , such as cheddar, cut into small chunks
500g pack shortcrust pastry
1 egg , beaten

Recipes .Spinach and feta filo pie recipe
Serving instructions
Serves 4 |Takes 10 minutes to make and about 30-35 minutes to cook |Rate 1 star Rate 2 stars Rate 3 stars Rate 4 stars Rate 5 stars Rating .This vegetarian pie costs around £1.50 per person to make. It's a cheap and cheerful meal that looks more expensive than it is!
Ingredients
500g spinach
A knob of butter
1 large onion, finely chopped
2 garlic cloves, chopped
200g feta, crumbled
4 tbsp pine nuts, toasted
3 large free-range eggs, beaten
4-6 filo pastry sheets
½ tsp caraway seeds
A tomato and red onion salad, to serve
Method
1. Preheat the oven to 180°C/fan160°C/gas 4. Wilt the spinach in a large pan over a low heat. Allow to cool, then drain well, squeezing out the excess liquid with your hands.
2. Melt a knob of butter in a frying pan and add the onion. Cook for 5 minutes, until soft. Stir in the garlic and cook for a further minute.
3. Remove from the heat and add to a bowl with the spinac, feta, pine nuts and eggs. Mix together and season well. Spoon into the base of a 1-litre baking dish.
4. Brush 4-6 filo pastry sheets with melted butter, lightly scrunch and lay over the spinach mixture. Sprinkle with ½ tsp caraway seeds and bake in the oven for 25-30 minutes, until the pastry is crisp and golden.
5. Serve with a juicy tomato and red onion salad.

Hm, I'm not a huge fan of mushrooms TBH.

I've done "meat" and potato pie before. The first one was an accident, I was experimenting and trying to make a sort of root vegetable stew and got it all wrong, ended up with something more akin to mashed potato. I was about to toss it out and start again and suddenly thought, "aha, pie filling!"

Is it the Pie Society of Great Britain? The government? Morrisons? Binners?

is there any Lamb kicking about yet? never had a lamb pie and I reckon it would be sublime.

That raises a question worthy of the STW massive. What crusts for...?

Personally I've never seen eye to eye with "pies" that only have a top crust. That's not a pie, it's a dirty fat pretender, it's a bowl of soup with ideas above its station.

My pie will also be home made PORK PIE ,from home reared pigs ,head meat,smoked bacon ,herbs and proper gelatin from bones n trotters boiled in a stock .
