Hallelujah!!! 

Just what we all need to cheer us up. A celebration of pastry-based lovliness! I’ve just got all the ingredients for a chicken, gammon and leek pie and I’m just about to get the filling slow-cooking for the day.

So how are you planning on marking the greatest week of the year?

It will be a chicken ham and mushroom pie here... but maybe not until Friday as that's pie-night!

Had a chicken, smoked bacon and leak pie from Lidl last night. I can recommend 👍

Pie week started on Sunday for us with Chicken, leek and tarragon and Lamb, mint and tomato bought fresh from the local farmers (that's add 30% 'standing in a windy barn' tax) market. Pastry thick enough to repel boarders. Once breached with a fork siege engine, out comes all that lovely gravy that's been marinating with the meat.

As these pies are on the larger side, the plan was just a side of vegetables. But as I'd been riding, we upgraded that to some air fryer chips.

To honour pie week, we plan to recreate these two magnificent homages to a proper pie.

Now then. I am all for pie, sweet, savoury fully encased, top only (but never a square of seperatefly baked puff bslanced on top).

But really... Who give a shit when there is a stack of pancakes to get through

Must have been psychic as without knowing this I made a chicken and vegetable pie with left over roast chicken for tea yesterday. Shortcrust pastry top and bottom and the ceramic pie bird in the centre to let the steam out. Not a single grumble from the kids for a whole mealtime!

Pies definitely win.

I finished the last of Mrs officers excellent chicken, bacon and mushroom pie just yesterday.  Most fortunate to have a decent baker in the house.

Our weekend pie is the same as yours. It's a Jamie Oliver recipe that I used as a base but swapped out the milk for chicken stock and added mushrooms. My other half loves it and says it's better than his pie speciality which is steak and mushroom in Old Peculier

We love pies

@fasthaggis - I use Campbells condensed cream of chicken soup as stock. It’s bloody lovely!

They do a butter pie and Google suggests they're 13 minutes away.  I may have to indulge, see if they can usurp Clayton Park.  I'll report back if I do.

As good as Clayton Park are (their toffee slice's are awesome) they shouldn't be uttered in the same pie crumb breath as Cissy Greens!

 

For over 200 years, Cissy Greens has been at the heart of Haslingden, Lancashire, creating what is now one of the most famous meat pies in the country.

In other good news, I'm in the office tomorrow and the canteen has "Selection of individual pies all served with chips or mash, seasonal vegetables and gravy". No packed lunch for me this week!
