We have an open fire, and the plaster on the back (an area of a little under 1m x 1m) has blown. It seems that the blown plaster is neatly coming away - it's about 5-7mm thick. The blown plaster will very easily fall off. The plaster/cement underneath this looks good and is nice and smooth, no signs of blowing or cracking.
So I'm guessing the top coat/render/cement(?) needs to be skimmed back on. Is it a simple job using something like this
Or is there more to it? More than happy to try my hand, but this is new to me so don't want the place to burn down!

Put the fire out first.
Don't skim an open fire place, just render it. Plaster won't cope with the extremes of temp and just crack. Our fireplace is just painted render around the wood stove.
Best rendered with a mix of sand cement and lime so as not to crack with the heat then paint
Agree with above, don’t plaster just screed. If painting use water based paint only.

I don't think you need anything special, just a sand and [any] cement mix.
Just standard sand and cement available at your nearest B and Q, wickes or builders yard.
