I’m an uuni fan. Trying to get some new flavours going on. Chicken tikka, onion. Then add mango chutney and raita with chopped coriander post cook.

Corned beef, with dairylea chunks

Roast dinner left overs

And tonight’s lamb rogan josh with a duck egg cracked in.

What do you be making??

Get down to Waitrose:

Calabrian N’duja.
Calabrian sausage - salsicca piccante.
Mozerellla
Mutti pizza sauce

Finish with rocket, pesto, mozerella pearls.

Basically a rip off of the pizza express Calabrese.

Tried an egg last time out. 1st one was terrible, ruined pizza with a raw egg on it. 2nd one the egg was cooked (still had a runny yolk mind) and wasn’t too bad. May have been better with a generous amount of chilli flakes.

Still prefer nduja and chilli flakes though.

slight derailment as it isn't then pizza but

white cheese (fromage blanc, fromage frais will do)

finely chopped onions

pre-partly cooked bacon/lardons

mushrooms if you want.

I think the point of a recipe is to expand on the “everything else” bit. I’m with you on the no fish and yes chilli sauce.

I’m partial to:

Charcuterie meats, buffalo mozzarella, antipasti veg, rocket.

Or

Florentino. But instead of cracking the egg in the middle, whip the egg and drizzle across the whole pizza like a lattice omelette.

Both served with a olive oil / balsamic drizzle.

Im the traditionalist. Milano salami,chorizo, thin slices of garlic, thin sliced onion and mozzarella.
Occasionally its breast of chicken and taleggio. Or if I can find it, black truffle salami.
Not so heavy on the tomato paste base, tomato has quite an overpowering flavour.

Corned beef and dairylee ?? 😯 Ye Gads.

You canny beat pizza Margherita but maybe try camembert, thin sliced apple, caramelised onions

Tomato sauce and creme fraiche mixed up as the base sauce, then Nduja and blobs of creme fraiche and garlic on top. Just tried it yesterday and it was delicious. Mascarpone would work also.

Can't beat a capricciosa though.

A really good pairing to add to almost any Italian style topping is fresh red onion and Gorgonzola.

Try with roasted peppers and a little Italian sausage of your choice.

Chorizo, jalapenos and honey is nice.

I also made a big mac pizza once

Some mince, onion, gherkins, big mac sauce (mayo, mustard, vinegar, sweet relish, garlic and onion powder) - works surprisingly well on a pizza

Keep it simple. No meat whatsoever.

Tomato and mozzarella. Serve with a grilled vegetable salad.

I like a Veg loaded pizza with some Goats cheese.

I also lots of seafood (prawns/tuna/anchovies/smoked salmon?) with capers and a bit or mozzarella.
But probably not Seafood with goats cheese that would be too many competing strong flavours.

Pastrami, pickled beetroot and some cheddar would also work for me...

Certainly not a fan of Fruit on Pizza.

The tricky question then becomes what sides?

Mac 'n' Cheese (yet more carbs and fat)
Calamari
Potato wedges
A salad (drowned in balsamic dressing)

Definitely this. I don't care much for Feta, but together it just works and robust enough flavours that are complemented by the smokiness from the uuni.

Tuna and spring onions then, when almost cooked, pull the toppings away from the middle and crack an egg in there and cook until the egg still has a nice runny yolk.

Slightly below topic, and not sure it's been mentioned before, but I recently discovered this ready rolled dough for when I was camping at the weekend. Allowed me to make 12 pizzas over 2 nights without the space and fast faff of rolling. Really tasty, crisp base and I split each in 2, so that's 4 pizza per roll (£2 currently in Sainsbury's local too)
