I know I should probably get a sparky in, but equally I should probably be able to sort this out myself.

The picture below shows an old bulkhead light that needs replacing, the wiring from the left hand grommet comes from a PIR detector, the wiring from the right hand cable coems from the main circuit / conduit, the loose black cable was wired in to the connector block with the other 2 black cables.

I want to replace the lamp / PIR with a single integrated lamp (therefore Live, Neutral Earth for lamp, with 4 cables in to the connector block from the circuit).

There is a switch inside the house to turn the lamp on and off, which I guess is the Grey cable coming off the circuit.

Everything you've said is correct.
Brown = permanent live
Black = neutral
Grey = switched live from internal switch
G/Y - cpc (earth)
Assuming you want the new fitting to have an integrated PIR you take the permanent live, neutral and earth to it.
Somewhere (hopefully) inside the new fitting you'll be able to identify the switched live from the pir that will be going to the lamp. To this you need to connect the grey from the house switch so you can override the pir and have it permanently on (you'll then have connected your light switch in parallel with the pir).
Turn it all off at the CU first, obvs!
Edit: put some blue tape on the black conductors to identify them as neutrals as black is a phase colour now.

Thanks for the reply, I'm not bothered about having it switched permanently on, or even to switch it off at the switch. Can I wire the connector block in such a way as to just wire the new unit straight in to the connector block?

You can. Just connect it to the P/L (brown), N (black, with some blue tape on it!) and E (g/y). The S/L (grey) can be put in with the brown to stop it flapping about and keep it secure. That'll mean the internal switch is effectively redundant though.

Ok that's great, the lamp I've bought is a cheap one where I can't get in to it easily, looks like the bulb is glued in to the metal body (Toolstation Wessex LED floodlight).
