I have brown bread (not quite defrosted, but let's not do that again), cheddar cheese and a fridge and cupboard full of a wide range of condiments and other stuff. Oh, and a grill.

So, suggestions for cheese-on-toast-derived culinary amazingness please.

Keep it simple, 2 options:

1. Generous splash of Worcester sauce on top pre- grilling.

2. Marmite spread on toast before cheese going on top.

Lee and Perrins Worcestershire Table Sauce over the top of the cheese and put it under the grill again for a short time. It's brilliant.

Stick some jalapenos on it. Or Chipotle Tabasco, nice flavour.

Henderson relish..... or pesto under the cheese. Cheese and tomato(chopped small) melted in a pan (with a dash of Hendersons, spread on toasted bread and put under grill till top browns slightly. .. pain in the arris to wash up from but blooming lovely. .. hth

Here's some I prepared earlier...

Tip - toast the bread, butter the toast, add cheese, cook slowly. Pesto or Sweet Chilli on top, maybe Reggae Reggae.

Right, some good ideas here.

I have adapted a couple and come up with:

Slice 1) Hot garlic pickle under cheese
Slice 2) Tomato and brown sauce under chees

I shall report back...

Nice mature cheddar toasted to golden perfection on thick sliced home made bread, no extras or fripperies, sometimes less is more..
That's all you need, everything else is a distraction from the cheesy goodness..
unless you're the sort of pervert that puts sauce on bacon as well...

don't grill it.

butter the underside of the bread, put your chosen topping on top (cheese and homemade chutney works for me) and cook it on a wire rack in the oven for 15 minutes.

Saw a thing on telly once where they did a blind taste test, something to do with the extra taste sense we have, Umami, they gave people normal cheese on toast then cheese on toast with marmite under the cheese. Everybody liked the marmite one, even people that didn't like marmite!!

So, I've cooked, consumed and cogitated and the result is:

Luverly jubbly, really, really nice.

[i]Slice 2) Tomato and brown sauce under cheese[/i]

Satisfying in a simple way. The addition of a bit of onion would have perfected it I think.

Damn this thread. I've rushed home from work foaming at the mouth as a result of this thread.

Cheese is in the process of being grated and I am going to be eating my body weight in cheese and what ever else I fancy spreading on toast underneath now!

Marmite and pesto is definitely a go-er, will see what else I have knocking around.

on a slight tangent my favourite melted cheese toasted snack type thing is cheese stuffed crumpets with butter and marmite on;

slice into the side of a crumpet with a sharp knife

fill the pocket with thin slices of strong cheese

toast either in a toaster or under the grill (if under the grill definitely toast the bottoms first or the cheese will try and escape when you turn them over)

spread with butter and marmite

absolutely brilliant post ride snack with a huge cup of tea

it's not chopping it in half just make it into a pocket - just so much nicer with the butter and marmite on it and cheese in the middle

Bread, butter, Tommy K, ham, cheese. Grated, 70% strong cheddar, 30% pizza mozzarella. Devour. Like a croque monsieur, only less pretentious

Personal favourite is the addition of sliced pickled onions (the silver ones) which go really well with cheddar.

May I recommend: Lightly toast one side of your bread. Meanwhile, grate cheddar and mix with a bit of chutney (Branston if you must/have to, otherwise homemade preferable) in a bowl. Spread this delightful mixture over the untoasted side and place under medium grill until desired amount of melting. Serve with steaming mug of tea and enjoy 😛

Lightly toast the bread, put the sliced cheese on then add plenty of black pepper from a grinder, and plenty of hot chilli from a grinder, (the Morrison ones are particularly good), then stick back under the grill.
Much yumminess, with minimum time wasted in preparation.
Right, I know what my supper is gonna be a bit later on...

4 slices of 'just done' toast were ravished upon returning home from work.

Here are the toppings and my opinions...

Red pesto - The tastiest but could've done with a bit more pesto.

Marmite - Avoid, didn't like it.

Green pesto - Tasty but slightly over-powering. Sun-dried tomatoes seem to sing better with cheese.

Tomato puree with ham - Second best, again could've done with a bit more puree.

Fancy condiments,sauces and fish based products are a no no.

Or sainsburys mackerel in hot n spicy sauce under the cheese (+jalapenos)
Or au naturel with some pickle on the side (+ maybe just a few jalapenos)

I have an unhealthy chilli fixation today.

Anchovies yum. Not ob cheese on toast though. In pizza and fresh fish dishes.
