Morning all.

Advice on the jar says use within 3 days. How long do you leave it before using it?

A couple of weeks..

As lng as there's no mould growing on it it's fair game in our house
If you're worried mark the date on the jar with a penne

I write on the label the date I open it, using a felt-tipped penne.

It's pretty acidic, so it just ripens a bit with age. Spoon the mouldy layer off the top, add lots of garlic for good luck, and Bob's your uncle.

If you're using shop bought pasta sauce, I suggest you throw it away and hop on the peasant wagon to Iceland and just buy yourself some ready meals.

If it's not got fluff it's fine. Even if there's a bit of fluff round the edges it is still probably OK, just try to avoid using that bit.
