I have to post a large letter (meets the dimensions for one), but I can't get to a Post Office to get one of the larger letter stamps. Can I use 2 x 1st class stamps instead? I know this is more costly, but I have them handy in my wallet.

Yes. They only started putting 1st Class on the stamps so they could put the price up so often.
