I'm in need of some inspiration for fillings.
Do you put the selected combo on half the egg and flip the other half over creating a semi circle type 'sandwich' Or scatter liberally all over and finish beneath the grill?
I appear always to default to bacon,cheese,tomato and spinach. (on half and flipped over)

Mmmmmm, bacon, mushrooms, cheese, onions, more cheese and more bacon finished under the grill with some cheese to finish.

Umm. Fried peppers, onions, tomato, chilli and cheese works well.

I always flop over, but make sure that the egg on the top is nice and runny, so you get a creamy texture, not rubbery.

Also like to make a spanish tortilla from time to time, with sliced potatoes. Yum.

Bizarrely, both working at home today, wifey just asked what I fancied for lunch, I'd seen the eggs so said omelette!

All of the above sound good. Current trend is filling on half, leave it runny and flip half over, but I'm not fussed.

Or leave it plain and have it in a sandwich 🙂

However, we are both out tomorrow, so we are having pancakes for lunch today instead as we won't get time tomorrow 🙂

Go to on a Sunday morning is chorizo, peppers, tomato and red onion fried up then add eggs. A little cheese grated in then folded.

chorizo, spinach, peas, maybe some cheese if it's a non-fasting day.

Half mooned, but the more fillings you add the more potential for ingredient breakthrough and tearing during the flip.

Pretty rubbish at flipping an omlette, or even halving it, so tend to cook half and then finish under the grill.
I think I load it with too much filling, so it doesn't like to be moved.

I normally go for bacon/ham, cherry tomatoes, mushroom and cheese.
Cheese and onion goes well.
I've done tuna & spring onion too, which I like but is more of a 'cook whatever's in the cupboard' type affair.

1/2 a tin of tuna actually works surprisingly well, especially with a little bit of grated cheddar on top. And I'd imagine a few capers would go well.

My current favourite post ride protein snack.

Bacon, ham, potatoes, tiny bit of cheese, mushrooms.... Are mixed up.... Almost a scrambled omelette really 🙂

A sweet option:

Cinnamon in the mixture.
Raisins, both in the mixture and in the middle of the half-moon.
Blueberries
Coarsely crushed walnuts.

With regard to flipping: I tend to get a spatula, or something similar underneath and then gradually turn the pan more than the omelette until in a position where I can turn the whole lot back up the right way safely.

mine are more than "almost" scrambled.

Generally I go for a mushrrom, chorizo and spinach one in the morning.
A little bit of smoked paprika on omelettes has been a new discovery!
